Stuff is not nothing. Neither are quantum fields, which you need to make "virtual" particles pop in and out of existence. So aren't they just changing the subject from nothing (nothing) to something (gravity, quantum fields, whatever.)
Unless you cheat by defining nothing as "no physical particles."
