The problem with the cast iron pans they make nowadays is they don't have a machined inside bottom surface. I have the same 9-inch one now for 40 years, and it was second hand when I bought it, so I don't know how old it is. It's bottom inside surface is machined. I was a machinist for decades, and I know a machined surface when I see one.
A machined inside bottom surface is the tits. Are there any brands that make that any more? If there are I'll by one for my daughter, I don't care how much it costs.
